Quick. Easy. Healthy. PIZZA !!?!
So, we are going to start including more recipes for kid friendly food/snack ideas. This pizza is super quick, so easy and pretty healthy. Lately, it’s been Jack’s lunchtime request and that is A-Ok with me. It’s nothing fancy or out of the ordinary and some of you may already be making it but I thought I would include it incase some of you just hadn’t thought of it or haven’t made it for your kiddos yet.
You can add literally ANY toppings you want of course, it’s pizza anything goes, so you can customize lunch for even the pickiest eater and you might be able to sneak in a veggie or two, mama win!!! I also like to make two or three at a time and then I have extras to either take with us during the week or just reheat at home. Sometimes we fold it in half for a pizza quesadilla (easier/less messy for an on the go lunch).
What you need:
- Tortilla shells – any size and kind work (whole wheat, tomato, pesto, original, corn…)
- Pizza sauce or plain tomato sauce if your little doesn’t like any spices
- Mozzarella (or cheese of your choice)
- Pizza toppings (we always use pineapple and some type of meat, ham/sausage/ground chicken) whatever your kid likes
Spread sauce on tortilla shell. Sprinkle with half of your cheese. Cover with toppings. Sprinkle the rest of the cheese on top. Bake in oven at 350 for about 10mins or until cheese is melted. This is a fun lunch to get the kids to help you to make if you have the time.
Hopefully your kids enjoy it as much as Jack does! Bon Appetite!
For days when you have more time this Ultimate Pizza Dough recipe from Canadian Living makes the BEST thin crust pizza and never fails! It’s even approved by my Italian Momma!
